Since 1985 the family Muñiz-Chico, in Bodega La Perdiz (Wine Cellar The Partridge), from the town of Villanueva del Ariscal. The founder Mr. Antonio Muñiz Madrid gave it this name by his great passion for partridge hunting with claim.

When the grapes arrive at the winery, very early and promptly to avoid losing any of its qualities, are pressed immediately by the brothers Antonio and Manolo helped by his mother Mrs. Isabel Cotan Chico. The wort is introduced to the barrels where fermentation begins naturally, after the fermentation when the wine is clarified, the entire crop is consumed in the restaurant of the winery. Young wine that in this area of Aljarafe sevillano is called mosto. The Customers drink wine accompanied by great variety of dishes gastronomy of the region (Tapas), who masterfully prepared Mrs. Isabel Chico and her daughter Isabel Muñiz.



La Bodega la Perdiz, desde 1985 elabora su propio vino procedente de las viñas que la familia Muñiz Chico tienen en la localidad sevillana de Villanueva del Ariscal. Su fundador D. Antonio Muñiz Madrid le puso este nombre por su gran pasión por la caza de la perdiz con reclamo.

Mientras que D. Antonio continua en la viña supervisando la vendimia, las uvas llegan al lagar muy temprano y sin demora para no perder ninguna de sus cualidades, son prensadas de inmediato, tarea que realizan Antonio y Manolo ayudados por su madre Dña. Isabel Chico Cotán. Una vez decantado el mosto pasa a los bocoyes en donde de manera natural comienza la fermentación, una vez aclarado el vino, toda la cosecha se consume en el restaurante de la bodega, un vino joven de la variedad Garrido fino que por esta zona del Aljarafe sevillano se llama mosto. Los clientes de la bodega para acompañar el vino disponen de una gran variedad de tapas que con gran maestría preparan Dña. Isabel Chico y su hija Isabel Muñiz.
